Salad season is upon us.  I’m trying to be healthy this week as I’ve been boozing it up and not eating particularly well.  So today I bought loads of saladings (as they call them at the Muswell Hill Horticultural Society) and made a lovely fresh salad for my tea.  But for me, it’s not a decent salad without a decent dressing.

I’m always searching for the perfect salad dressing and this one is right up there.  A1 Steak Sauce in salad dressing – yes!  And who would have thought that A1 Sauce was around in 1916 when this recipe was published?  Mad!

I’m lucky.  When Heather goes to the States she usually smuggles some back for me – we can’t get this in the UK.  I’m nearly running out though – eek!

So anyhow, here’s Ina’s recipe:

2 tablespoons mayonnaise dressing

1 tablespoon chilli sauce (I used Maggi as that’s what was in the cupboard)

2 tablespoons olive oil

1 tablespoon white vinegar

1 teaspoon cold water

1 teaspoon A1 sauce*

¼ teaspoon powdered sugar

¼ teaspoon paprika

¼ teaspoon salt

Beat all thoroughly, place on ice ten minutes and pour over salad when ready to serve.

This salad is sufficient for six persons, and is used on hearts of lettuce or any green salad.

Ina puts this lovely note at the end of her recipe: “I hope some kind soul will try my salad and approve of it.  I am not much of a cook, but very fond of good things to eat”

Well Ina, I’m a kind soul from almost 100 years in the future and I think your salad is fabulous!

*I am assuming this would refer to A1 Steak Sauce in 1916 – I know there are fancy A1 sauces these days, but I’m guessing it would have been the original back then…
